1: Preheat the oven and prepare a donut baking tray. 2: In a bowl, mix together oats, protein powder, baking powder, and stevia. 3: Add in low fat Greek yoghurt and unsweetened almond milk, mixing until well combined. 4: Stir in vanilla extract. 5: Pour the mixture into the donut tray, filling each mold. 6: Bake for about 15 minutes until golden. 7: For the topping, mix monkfruit icing powder with unsweetened almond milk, food coloring, and sprinkles. 8: Once donuts are cool, drizzle or dip them in the icing.
