1: Boil the cut potatoes in water with 1 tsp of vinegar for 3 minutes. 2: Season with salt, pepper, garlic powder, smoked paprika, cumin, and chilli powder. 3: Add the extra lean beef mince to the mix. 4: Pour in the red enchilada sauce and stir with 1 tbsp of tomato paste. 5: Place the mixture in an air fryer at 200 degrees Celsius for 18-20 minutes or bake in the oven at 220 degrees Celsius for 20-25 minutes after spraying with light cooking oil. 6: For the cheese sauce, melt 25ml of milk in the microwave for 30 seconds, stirring every 10 seconds until thick. 7: Add the cheddar cheese and ensure it melts into the sauce. 8: Serve the fries topped with garlic yoghurt, chilli, and spring onion.
